| Master of Inexpertise Premium Member | Chinese Chicken Salad So, I made this great chicken salad yesterday for me and my wife, and it was incredible. I thought you'd like me to share the recipe with you. Keep in mind that I don't measure when I cook, so any of these measurements may be completely off, as I'm going out of memory here.... Chinese Chicken Salad Prep time ~45 minutes Serves 2-3 Chicken 3 boneless, skinless chicken breasts 1 Tbsp Chinese 5-spice powder 2 cloves garlic, finely chopped and crushed 1 1/2-inch piece of fresh ginger root, peeled and finely grated Pinch of cayenne pepper Pinch of garlic powder Pinch of cumin 1-2 Tbsp canola oil In a bowl, combine all spices. Add canola oil until spices turn into a thick paste. Spread mixture onto the chicken breasts. Grill for 4-6 minutes on each side, or until done. Vinaigrette 1 package chicken-flavored ramen (flavor packet; save noodles) 1/4 cup sugar 1 Tbsp Chinese 5-spice powder 1 1/2-inch piece of fresh ginger root, peeled and finely grated 1 tsp cayenne pepper Pinch of garlic powder 2 Tbsp soy sauce 1 Tbsp white vinegar (or rice wine vinegar) 1-2 Tbsp canola oil In a bowl, combine all spices. Add soy sauce and vinegar, stir until mixed. While still mixing, add canola oil until desired consistency is acheived. Salad 1 bunch of romaine lettuce, cut or torn into bite-size pieces 1 red bell pepper, diced 1 orange bell pepper, diced 1 yellow bell pepper, diced 1/2 small yellow onion, chopped 1/2 cup green onion, chopped Optional: 1 serrano pepper, chopped (If you like heat) Combine ingredients in a large bowl. Add about half of the vinaigrette, or enough that the salad is well-dressed, but not over-dressed. Crush the packet of ramen noodles that you saved before and pour into the vinaigrette bowl, coating the noodles evenly. Add to salad bowl and toss. Place salad on plates. Cut chicken into large, bite-size pieces (or small strips, if you prefer), and top each plate of salad. Enjoy! |

| Master of Inexpertise Premium Member | Thanks! I almost died when I tasted the chicken, it was so good... I'll probably never make it that good again, but it was awesome. I was worried because the chicken smelled really strong when I was grilling it, but I was very pleasantly surprised. |
